You might run into an issue if your are injured in a crash. They should cover any of the vehicle damages though.

The idea behind insurance is that it protects you from a sudden and accidental loss. Something that is not expected. If you remove your airbag from your car, you can pretty much plan on being injured in an accident, where if you left the air bag in, you may not have been injured at all; or at least mitigated your injury. This is called an assumed risk. If you break into an abandoned building and walk around on a rotting stair well, after passing signs that post that it is dangerous to enter the building, you are assuming the risk. The insurance company is not going to want to pay for your injuries if you are intentionally putting yourself into danger.

Medical expenses are so much more expensive than property damage that, in professional opinion, it's just not worth messing with your air bag to have a cool steering wheel. I don't even handle bodily injury claims, and the thought of having a claim where someone intentionally removed their air bag makes me cringe. I'd say that it's not worth it at all. I'm a claims adjuster by the way.

Also, I'd just call your agent and ask. Don't ever be afraid to call your agent and ask. They won't tell on your for asking or anything. In fact, in most cases, even if you already did it, they still wouldn't say anything to anyone.
