After installing a head gasket, is there a breaking in to do?

Nope. Only thing you need to do is once the car is back together and running, let it idle until the temp gauge shows normal, and then go for a spin around the block to get it nice and hot. Then park it over night, let it cool completely, and then pull the valve cover and retorque the head bolts. This is standard procedure for all aluminum heads, your service manual (or someone here more familiar with the car) will provide you with torque sequences and the exact procedure for retorquing. Some manufacturers want the bolts broken loose and retorqued one by one, others just want you to make sure they're still torqued to spec.
