I thought I'd share a handy recipe, especially for those with kids.
I was watching the kids last night while my wife was at quilting class, and i had to make them some dinner. Feeding kids is tricky because they'd rather eat McDonalds hamburgers that Filet Mignon and they don't like foods that are too complex or spicy, so Jambalaya was out. I put some frozen broccoli in the steamer for a vegetable and experimented with some sauces for a few minutes, here's what I came up with:
Thaw 3 boneless chicken breasts in the microwave for a few minutes, then put them in a large pan over medium heat and shred them with a fork/spatula as they cook through, using just enough oil to keet the meat from sticking
Add 2 cups of frozen corn to the shredded chicken breasts, continue cooking over medium heat until corn is thawed
Add the following:
1/2 cup honey
1/2 cup apple cider vinegar
1/2 cup ketchup
liberal sprinklings of salt, powdered oregano, powdered garlic, and powdered mustard seed (Adobo seasoning for all you cook types)
Raise heat to medium-high and cook until desired consistency is reached.
I put a spoonful on a slice of bread and folded it in half for the kids, but I could have also put it in a tortilla.
The kids loved it, asked for seconds, I loved it, and my wife loved it when she got home.
For adults, I think a tablespoon of Lea and Perrins Worcestershire sauce would have spiced it up a bit and enhanced the flavor.
